We have a perforated skillet that we use for grilling small stuff like vegetables, shrimps and so forth. It works just great and we have used it for years by now. However, the other day we stumbled upon this alternative take on perforated skillets that was new to us; the mesh skillet. The principle is the same, of course, but the mesh, providing more holes than our old skillet, may let more heat and aroma through. The site that sells them claims the idea comes from the Spanish Basque province. We would not know about that, but we would really like to try one of these mesh skillets. USD 29:95.brbr
