Celebrated NYC-based pastry chef Dominique Ansel of cronut fame and so much more (see our CH Video with him) has just launched an exciting new pastry flour. Made in partnership with Grands Moulins de Paris, France’s go-to professional flour company, this is the first time that his preferred blend is available to the public. The French grown and processed flour is milled to T55 giving it a lighter and fluffier consistency. It has a lower gluten content than most other flours and is intended for baking soft, fluffy things like chiffons, sponges, pancakes, crêpes, etc. Try it out with many baking recipes and feel the difference it makes. It is packaged at 750g / 1 lb 10oz.
